Fluffy Pancake Batter

Pancakes are a true classic and perfect for breakfast, lunch, or even a sweet evening meal. With a good pancake batter, you’ll make soft, fluffy pancakes that taste great with sweet or savory toppings. This simple recipe for about 10 pancakes ensures perfectly cooked pancakes every time!

Ingredients

  • 250 grams flour
  • 500 ml milk
  • 2 eggs
  • Pinch of salt
  • 1 tablespoon sugar (optional, for sweet pancakes)
  • 1 tablespoon melted butter or oil (for in the batter)
  • Extra butter or oil (for frying)

Instructions

Mix the batter
Put the flour in a bowl and add the salt (and sugar, if used). Make a well in the middle and add the eggs. Slowly pour in the milk while mixing with a hand mixer or whisk, so you get a smooth batter without lumps.

Let it rest
Let the batter rest for 20–30 minutes. This results in fluffier pancakes, as the flour has time to fully absorb the milk.

Heat the pan or crêpe maker
Heat a little butter or oil in a frying pan over medium heat. Of course, using a crêpe maker is even easier.

Time to fry!
Pour a thin layer of batter into the pan and swirl the pan so the batter spreads evenly. Fry the pancake for 1–2 minutes until the bottom is golden brown, flip it, and fry for another 1 minute.

Serving
Serve immediately with your favorite toppings, such as syrup, powdered sugar, fresh fruit, chocolate spread, or even savory toppings like cheese and bacon.
